The slightly wider 215 will be better on soft ground and sand but wider isn't always better! The 195 will be better in slippery conditions and deep mud, and less likely to rub on the body.
All of that considered, availability of tyres in these sizes is fairly limited so if you have a specific tyre in mind you might just have to take the size it comes in! Personally I'd avoid re-moulds unless you want lots of balancing weights and death wobble, but others swear by them.

It has been said earlier that 215 75 will just fit when on standard rims though I cannot speak for when spacers are fitted.
With lift you can obviously use a taller tyre.
Height I guess is best off road for clearance.

wont have to drive it every day soon so want to add the MT's for off roading, slippy mud.
I like the feel with the wheel spacers so really would like them to stay
