Just to clarify, all the sizes I listed are '31s', as in they are 31 inches tall, so they will give you the clearance you require.
Regards the rim width, narrow rims are better for protecting the tyre bead and sidewalls. The sidewalls are so tall on off-road tyres you can, within reason, fit whatever width rims you want. I'd always choose offset rims rather than spacers. It's one less thing to give issues, saves a bit of weight and hassle and IMO the rims look nicer.

This is why I am so vague on tyres and rims when you called in for a chat
It seems to me that even on apparently identical Jimnys some setups work on one and not the other. There seems to be little hard and fast rules.
Sounds like you are going for the same set up as my target as well

Ok so I am swaying more towards 750 r16 or 235/85 r16 now ha - thank you everyone!
What width wheels and offset would work best with these tyres? Also what ratio of transfer box would be the absolute best here?
I have spoken to Rockwatt and he still thinks 5:1 but I would like to gain other peoples opinions and real world experiences!

Well my 235/85 R16 should turn up on Tuesday next week if you want a look.

That would be very handy Martin! What offset/ width are the Vitara wheels you are fitting?

As a general rule the wheels ought to be about 70 percent of the width of the tyre. In practice anywhere between 5 and a half and 6 and a half should be fine.
