Some great advice guys. I think I'll go with a small amp for the speakers, perhaps some new speakers with remote tweeters and a small amp to drive those. Also, if I don't have my sub from the 90s, I'll probably go with under-seat or small integrated amp and sub behind the seat. I'm going to go with the advice of less is best and stick with the quality not quantity. I might even splash out on a new head unit, my one is about 7 years old now. I will probably get one that has DAB+ for future-proofing, even though it's not really rolled out anywhere I'll be driving.

Ok,
I managed to dig out my old 90s kit and quite pleased with the result. (All values RMS) Got an 80W Caliber amp, 12 inch 140W sub and a couple of 30W 6x9s from the old parcel shelf. Might use the caliber amp bridged with the sub as it was originally, then get a small amp for the front speakers. Bearing in mind my front speakers are only 40W so they will only need slight amplification and if I can find any room, perhaps fit the 6x9s somewhere too. All in all a much cheaper result than I'd have hoped for, just got do run in some power and speaker wiring and fit the sub to an enclosure and I'll be set.
