No work been done to diffs apart from both diffs and trans per box being serviced with correct oils. The front tyres have just been swapped around to make the most treaded tyres sit on the back-this was a few weeks ago. I haven't thought it might have been uneven tyre treads, thanks for that suggestion as they are quite worn down (especially on the front). I'm getting new tyres put on her this week so if trying to unwind the transfer doesn't work, I will try the 4wd when I get the new tyres on her and see if it doesn't over bind/stick/stall

The transfer box will 'unwind' as soon as you disengage 4wd. At this point, drive to the front axle is disconnected so there can be no more windup forces between the axles.

yes that could be it, a few months back I did the same and in 2wd it was a nightmare, although there was now more tread on the rear, when wet it would step out and slide at the slightest thing, this must have been down to uneven wear across the tyre as th outer edges were more worn (as they do this on the front).
never tried 4wd at the time, but it stands to reason that the result could be reduced rear grip and increased front grip when in 4wd, hence making it feel sluggish.
look forward to hearing what happens when you get new tyres, or you could simply change the tyres back around now and see if that sorts the problem .... that would be my choice

I can confirm that the tyres being changed worked. A lot of others forums mention having the same made/model of tyre on all 4 corners helping too
