Ultimately I traced the "short" to the black and white cable taking power to the alternator regulator another cable then takes power back to the battery light. There are seven black and white cables crimped together within the harness, just after it runs through the bulkhead into the engine compartment.
I initially just took the bad cable out of the equation, thinking that having no charge warning light wouldn't be an issue. However on testing the voltage across the battery with the engine running, it appears that the power to the regulator is required for the alternator to charge the battery.
So I have run a new cable to take power down to the regulator and all is now fine!

Well done for finding the fault
I've heard that the alternator will fail to work on some cars if the charge light/lamp blows. It appears that the Jimmy is one of those cars.
