Drilled and groved disks are designed to disperse heat as quick as possible but if you get mud caked in them your in the same boat really

You could fit hub flushing valves from a boat trailer and run fresh water through the drums?

I have these fitted to my boat trailer to flush the drums of salt water, you should see what a winter on the hard stand does to the brakes after a previous season of sea boating :(
