I have a '54 plate Jimny with central locking via the Key (not a remote fob).

If i were to open the bonnet, lock the Jimny up and then remove the battery and then close the bonnet - would the central locking still work ? (aka could i get back in)

You should be able to manually unlock either of the doors or boot. As the jimny didn't have deadlocks as far as I am aware.

Thanks James - I was just worried and could not understand how just turning the key in the drivers door locks/unlocks every other door?

There is a switch in the drivers side door lock. When it is locked, either by the key, or pushing the interior button, the switch closes and the other door and boot lock electrically.

With no power, the key will still lock and unlock just the one door, just don't connect the battery with the keys inside, as the doors may lock themselves when the power comes on.

If it suddenly breaks, go back to the last thing that you did before it broke and start looking there :)
