And somtimes the vehicle will have acceleration and no dash light on or gauges working and then the vehicle will restart when the rpm jumps back up

Sounds like it could be a weak or failing battery and/or a failing alternator. If the electrical system is weak you can get all sorts of strange problems.
Can you check the battery and alternator? Or possibly just charge the battery?

Norway 2005 Jimny M16A VVT, 235 BFG MT, 2" Trailmaster, ARB rear lck, 17%/87% high/low gears.

Any ground wire disconnected or come loose in the dashboard wiring loom?
any broken fuses?
has any wiring been done like aux lights or stereo lately?
All ground wires between engine and chassi still in place?
edit: any signs of green oxidation around battery or the main fuses in the engine compartment?
Mine had something like this when my dashboard cluster was broken from an idiot (signed) disconnecting the ODB connector with the car running. Had to change the cluster as the chips inside was broken. Car function was OK as long as I had the ODB connected. But did not get far without it and some functions where out..
