To be honest you don't need to go that far or spend that much money. The Jimny is very good in standard trim.
Mine just has a 2" lift, bit of protection underneath and a good set of tyres. I use it as a competition car as well as
a daily driver. :)

Do you think a 3" lift (with the right arms etc) will be sufficient with a 215/80 tyre? I don't want to tho down the route of cutting arches,,.. yet anyways!

You can fit 215/75s to a standard Jimny with no lift (as long as the tyres aren't remoulds). 215/80 sounds like a remould size, so they will probably come up bigger than they should. A 3 inch lift would give plenty of room.

215's and 30 mm spacer might just take the tyre past you arch so be careful B)

Bear in mind I am a non mudplugger; the only way for me is to get the axles higher or as high as possible and that means taller tyres but I think it is enough to get the tallest tyre on that will fit in without mods like lifts.

Instead of going for a 3" lift of questionable origin. Why not go for a 2" lift of a brand specifically made for the Jimny? Old Man Emu, Trail Master, Tough Dog and such?

Yes a bit more expensive, buy then you know exactly what you get.

The Procomp lift you mention is actually just Pro-comp shocks made for an unknown spec US truck just found to be right length for certain lift springs made somewhere in the UK.

With the tailormade kits I mentioned you get springs and shocks made exactly to the jimny. I know it's a bit more money. But far better quality and you don't need to consider castor correcting arms.
