Don't forget you lose ground clearance by airing down - so if you have deep ruts you have to make a decision on what's best.

I use 30x9.5r15 Kumho KL71's on 15x7 steel wheels.. I have tubes inside the tyres as well to help keep the tyres on.
I usually set them to about 8-10 psi on sand and mud. Haven't had the tyres come off the beads yet but if they do come off the bead its not hard to pop them back on.

I agree if you let the tyres down you'll have less clearance that's for sure.. But with small tyres like mine I'm gunna get the diffs stuck whatever pressure I'm at..

On my defender if I'm going rock climbing then I put my Michelin xpc 750s down to about 12psi but given it is a 90 pickup and I carry the least stuff for the trip I can it means it is relatively light, given the tyres are really for wagons and are 8ply they do deform over bigger rocks when twisted up but equally I only loose maybe an inch or less under the diffs.

This isn't exactly rocket science. Go out and give it a try. worst thing that can happen is the the comes of the bead, and you have to pop it back on.
