I think 8" wheels are a little bit too wide for 9.5 tire, but if you have those wheels readily available, go for them. 
Problems with too wide wheels are that the lip of the wheel might stick out some because there isn't enough rubber to cover it, and because of that there's a little gap left between the wheel and tire which is prone to get some sticks and other crap in it. And the other thing is, that the tire balloons more when fitted on a wide wheel, and that causes the sidewall to stick out more, so it's gonna have more unwanted contact on rocks and such, so it increases the chance of something penetrating the sidewall.

Hmm.. Perhaps I should go for 7x15" -20 instead then. I haven't bought the Maxxis tyres yet

I ran 215/65/15's on 8" rims
which converts to 8.46" of tyres it seemed to work fine for me,
but what paul says is right about being an increased chance of being damaged.
if you have bought neither yet i'd go for a 7" rim rather than the 8"
