Is there anywhere on a jimmy that is susceptible to being immersed, if so how have people overcome it?

Swivel housings are not sealed, fill with water and wreck the lower kingpin bearing.

Waterproof grease, and don't go through water

If it suddenly breaks, go back to the last thing that you did before it broke and start looking there

Just add a snorkel, accept the front axle will need stripping regularly for re greasing with waterproof grease and the sliders on the front brakes seize and need re greasing regularly, or do as has been said, avoid deep water!

Or change axles of course.

You will need to extend the breathers for the axles, transfer case and gearbox up to above water level. You can make something up pretty easily, or kits are available.
