I have had a Google around but can't find an answer, so...
I need to remove the power steering hoses to get access to the back of the front cross member as it needs welding up. So as the title states, how do I drain the power steering fluid from the system?

If it suddenly breaks, go back to the last thing that you did before it broke and start looking there

I'd undo the pipes that have to come off and let it run out into a bucket. 
You could use an oil syringe to suck the reservoir empty if you like.
Don't run the engine without fluid in the pump.
When you fill it back up, turn the steering lock to lock a few times at tickover to purge any air.
