I read that the final drive gear ratio of a 2005 jimny is higher than a 1998 jimny.
What does that mean for the revs on the highway?

im not 100% but i think the gearbox is slightly higher ratio due the diffs being lower ratio so i would think its very similar.
this means if you have a pre 2005 model fitting newer diffs would effectivly gear it down slightly
