I'ts hard to find offroading terrains where I am so it would mainly be road use and some greenlaning. so maybe -15 wouldn't be too bad?

Personally I struggle to see how wheel offset will really impact off road ability tbh. Unless it is being done specifically to fit a larger tyre.

In the Land Rover world, offset is super important, because at trials events you need a very good turning circle. So we often run different offset front and rear, wider on the front to allow more steering lock.

I'd just go for what you fancy and not worry about it too much :)

Do you know if -15 offset with 15x7's on 215/75's would be an issue with no lift?

I think your worrying about it to much, sometimes the forum and Internet gives to much information, then it frazzles your brain like it does mine (which is not hard) if you get 215 and —15 offset the very worst scenario is a tiny trim off the back of the front bumper but I doubt you will even need this and don't worry about your bearings they will go at some point like all cars but nothing drastically sooner than a normal jimny :)
